Luz Dary Polo is a mother of three and a coffee success story. After working on her ex-husband’s farm for 13 years, Luz Dary took a leap of faith and purchased her two hectare farm Finca Esperanza in Colombia’s Huila region to support herself and her children. She has since cultivated a farm that produces high quality specialty grade coffee, taking care to pick and harvest only ripe cherries and conduct regular soil testing.
She is renowned for her anaerobic fermentation processing method. This lot was exposed to a dry anaerobic fermentation of 70 hours before being pulped and left to ferment after pulped without water for an additional 70 hours. Afterwards, the cherries are shadow-dried in parabolic beds to ideal moisture content.
