Incredibly sweet and clean, Colombia Tres Dragones is reminiscent of Neopolitan ice-cream on a hot summers day - sweet strawberry, vanilla and chocolate up front with notes of mixed berries and lemon citrus in a big creamy body.
Region: Trujillo, Caicedonia
Altitude: 1500-1950 masl
This stunning natural process coffee hails from one of the most progressive and experimental coffee farms in the world. La Esperanza is a group of 6 farms in the small Colombian town of Caicedonia owned by a traditional coffee family. Brothers Rigoberto and Luis Herrera returned to coffee farming to and reconstructed their Grandfather's Hacienda (farmland) after studying engineering abroad.
The farm has taken great strides under the brothers’ leadership and forward thinking vision - in the last decade, it has moved from traditional ‘C’ market coffees, to the more delicate and exquisite varieties coveted by the Specialty Coffee Industry. The farm hosts a myriad of coffee varietals and its approach to harvest is more akin to the rigours of fine wine making where varieties are chosen more for their flavour attributes than their disease resistance.
The excellence in the cup is attributed to many innovations; a hand picked group of pickers are trained to pick only the ripest cherries and are paid by the day, rather than weight to discourage filling up baskets with unripe fruit. Every delivery to the mill is tested with a brim meter, to measure sugar levels in the fruit - the processing and subsequent drying is then adjusted accordingly. There are also a total of 95 quality hurdles in place for the beans to negotiate from nursery to port! This tremendous investment of human resources, time and energy only comes about through total dedication for excellence.
