Our Costa Rican Dulce is different to every sugar you've ever tasted; unrefined and minimally processed, it retains all of the natural vitamins, minerals and nutrients of the sugar cane it's made from, making it much better for you than ordinary sugar.
The chemical composition, in fact, is much closer to that of honey than it is to other kinds of sugar. The taste, too, is totally different: rich and mellow, Dulce has a beautiful caramel flavour with notes of malt and molasses and a depth that has to be tasted to believed. The texture is light and crumbly, like the best brown sugar you've ever tasted, but better.
The perfect companion to our coffee, this whole cane sugar is a close relative of the better-known Columbian Panela that you may have noticed creeping into Melbourne's better cafes over the past couple of years. Also known as Rapadura (in Portuguese) and Papelon (in Venezuela), it is similar too to what in Asia and the Carribean is called Jaggery.
This particular Dulce is made from highest quality organic sugar cane grown in the Tayutic Valley in Costa Rica and is the result of a careful and labour intensive process. Once cut, the sugar cane travels to the local 'ingenio' where the juice is pulped from the cane fibre. The fibre is dried and used as fuel for the boilers that reduce the juice to a thick, dark syrup called sugar 'honey', which is then poured into a cooling vat and stirred manually with huge paddles to evaporate the last of the moisture, condensing into the fine grains of what the locals call 'dulce'. All parts of the cane are utilized, from the stem to the juice.
