A debut origin for us here at Padre, we're super excited to be introducing the exceptional Ecuador Pablo Ponce to our single origin menu.
Nestled between two coffee giants - Colombia and Peru - Ecuador is a small country with plenty of coffee potential; fantastic elevation, good varieties, and lush farmland. However, the relatively limited scope of specialty grade coffee growing, has kept the country flying a little below the radar.
Pablo Ponce owns the 5-hectare farm Perla Chiquita, where 1 hectare is planted with about 2,300 Bourbon trees. Coffees at Perla Chiquita are picked ripe and dry fermented for 12-14 hours before being moved to raised beds. Drying can take between 10-14 days, depending on the climate conditions.
