Coffees originating from the Guji region are quite distinct from Yirgacheffe or Sidamo coffees. They are typically grown on a very small scale in the garden of the producers, where it is intercropped with other crops, thus making it organic by default. Messina washing station is a privately owned communal wet mill by Israel Degfa who owns and runs more than 20 washing stations across the south and southwest of Ethiopia. During harvest season, farmers deliver their coffee cherries to Messina daily where coffee is hand sorted before processing.
Producing high quality natural coffee can be challenging and requires high attention to detail. Israel has implemented training programs to increase cherry quality and invested in flotation systems for sorting before cherries go into production. During processing, coffee cherries are spread out in the sun on African drying beds. This process can take up to four weeks until cherries are completely dry depending on the climate. Once dried, the coffee is then graded and stored in a warehouse with a region label.
The slow naturally drying process results in intense, unique and amazing flavours in the cup profile. This natural Messina lot showcases the complexity of natural coffees originating from the Guji region.
