Washed process - Typica and caturra varietals from the Nasa Wesx community of Gaitania at 1700-1900 masl. 

BRAZIL SWEET ESPRESSO 25%
Natural & pulped natural process - Mundo Novo and Acaia varietals from Fazenda Nossa Senhora Aparecida (O’Coffee Estate) based in Alta Mogiana, Brazil.

BRAZIL FAZENDA BELA VISTA 25%
Natural process - Rubi varietal from Fazenda Bela Vista based in Minas Gerais, Brazil grown at 1080-1150masl. 

GUATEMALA HUEHUETENAGO 25%
Fully washed process - Bourbon, Caturra and Catuai varietals from Unex Exporters based in Guatemala City, Guatemala.

  • DOSE - 22.5g
  • YIELD - 36g
  • TIME - 28 - 33s
  • TEMP - 94°C
  • RATIO - 1:1.6

This recipe is for espresso and developed on a commercial coffee machine. Use as a guide to achieve your desired flavour preference. If you are unable to reproduce the exact result on your home machine, don’t panic, an alternative is to simply adjust your recipe using the ratio so it works best for your set up.
