Our latest single origin is another gorgeous coffee from Ethiopia's Yirgacheffe region. Arie from Padre HQ shares his thoughts on the coffee and gives his recipe for the Moccamaster.

Coffee has been a huge part of my life since I started working in cafes when I was a teenager. When I began my specialty coffee journey, I made it my mission to try as many different single origin coffees as possible. So, when I began working at Padre Coffee, I felt like a kid in a candy store.

Being a part of the Padre family is a coffee nerd’s dream as we have the privilege of tasting such a massive range of specialty grade coffees. It’s not uncommon for Ethiopian beans to show up on our cupping table. And it’s no secret at Padre HQ that Ethiopian are some of my favourite coffees.

Ethiopia Yirgacheffe Aricha, as the name suggests, comes from the famed Yirgacheffe region. It’s a washed coffee, as most coffees are coming out of this region, and presents a complex flavour profile which really took me by surprise. It has a lovely balance of sweet and citrus notes with apricot and honey lemon really shining through.

I used the Moccamaster to brew this coffee, which is one of my favourite ways to make my morning brew. Follow along with my recipe to experience this excellent Ethiopian coffee.

 

EQUIPMENT

  • Moccamaster Thermal Brewer
  • Moccamaster Filter Papers
  • Coffee grinder (electric or hand grinder)
  • Filter coffee
  • Bamboo stirrer or teaspoon
  • Scale
  • Mug or coffee server

RECIPE

  • Dose: 70g
  • Grind size: coarse
  • Yield: 1L
  • Time: 4-5 minutes
  • Ratio: 1:14

 

PREPERATIONS

Begin by weighing and grinding 70g of coffee.

Fold the filter paper and place it into the brew basket, flush with the sides. Soak the filter paper to get rid of any paper residue which will affect the flavour of the cup. Tip the coffee into the brew basket and give it a good shake so the coffee bed is even.

Pour 1L of filtered water into the Moccamaster reservoir. Turn your Moccamaster on, and place the carafe against the activating button making sure the latch on the side of the brew basket is closed.

STEP-BY-STEP GUIDE

00:00 - 00:30

As the first water begins to drip onto your coffee, use a bamboo stirrer (or a teaspoon!) to agitate the coffee and ensure that it is all wet through.

Open up the base of the filter basket, allowing the coffee to pour through into the carafe. Sit back and let the Moccamaster work its magic.

 

04:00 - 05:00

Return and your coffee should be finished brewing. Swirl your carafe so that the flavours are evenly distributed. Enjoy a cup (or two (or three))!

 

DOMESTIC ESPRESSO RECIPE

  • Dose: 20.5g
  • Yield: 37g
  • Time: 32 seconds
  • Ratio: 1:1.8

On the Slayer LP we use 20.5g of coffee and aim for a yield of 37g, however your machine and set up will determine what dose (and therefore, yield) you should aim for. Some domestic machines have 20-22g baskets, however some will only be able to hold 16-18g. Use the ratio to adjust the espresso recipe.
